For the Base
113g of butter
1 cup dessicated coconut
1/2 cup of brown sugar
1 cup of self-raising flour
For the Filling
1 can of condensed milk
2 tsp of golden syrup
2 tsp of butter
1 tbspn of instant coffee powder
For the Topping
85g of vegetable shortening
1/2 cup of drinking chocolate
Pre-heat your oven to a moderate temperature (180°C) and thoroughly grease a lamington tin.
Melt the butter in a small saucepan over low heat.
In a mixing bowl, combine the melted butter with the sifted self-raising flour, desiccated coconut, and brown sugar. Mix well until all dry ingredients are fully incorporated.
Press the mixture firmly into the base of the prepared lamington tin and bake for 20 minutes.
While the base is baking, prepare the filling by combining the condensed milk, golden syrup, butter, and instant coffee powder in a saucepan.
Stir the filling over low heat until the butter has completely melted and the coffee powder is integrated.
Spread the warm filling evenly over the partly cooked base and return the tin to the oven for a further 10–15 minutes.
To prepare the topping, melt the vegetable shortening and whisk in the drinking chocolate until smooth.
Pour the chocolate topping over the filling while the slice is still hot from the oven.
Allow the slice to cool slightly at room temperature before placing it in the refrigerator until fully set.
