These Cornflake Cookies—a golden assembly of butter-beaten dough, hidden chocolate chips, and a signature textured coat of toasted cereal—stand as a reliable staple in your family’s kitchen. Moving beyond a simple sweet treat, this recipe celebrates the tactile satisfaction of hand-rolling the dough and the aromatic shift as the cornflakes reach a toasted, golden crispness in the oven.

18 minutes
16 cookies
125g of softened butter
1/2 cup of caster sugar
🍪 Legacy note: Swap caster sugar with brown sugar for a slight caramel alternative
1 egg
1 cup of self-raising flour
1/4 cup of chocolate chips
a pinch of salt
2 cups of cornflakes
Pre-heat your fan-forced oven to 180°C and prepare a baking sheet by greasing it or lining it with baking paper.
In a large mixing bowl, beat the butter and the sugar until the mixture is pale and fluffy.
Add the 1 egg to the bowl and beat well until it is fully incorporated into the creamed mixture.
Gently fold in the self-raising flour, chocolate chips, and a pinch of salt until a consistent dough forms.
Take small portions of the dough and roll them between your palms to create even-sized balls.
Place the cornflakes into a shallow bowl. Roll each ball in the cornflakes until thoroughly coated, then place them onto the prepared baking sheet, pressing down slightly to secure the flakes.
Bake for 15–18 minutes or until the cookies have reached a signature golden-brown finish.
Allow the cookies to cool on the tray for a few minutes to firm up before transferring them to a wire rack.
The Creaming Shift: As you beat the softened butter and sugar, pay close attention to the visual transformation. Notice the moment the mixture shifts from a dense yellow to a pale, airy fluff. Let this rhythmic act serve as an initial grounding point, rooting you in the immediate sensory details of the hearth.
The Tactile Roll: When you form the dough into balls and coat them in the cornflakes, focus on the contrasting textures under your hands—the soft, yielding dough followed by the sharp, crisp rustle of the cereal. This manual act is a "tactile celebration" of your kitchen, anchoring you in the present moment through physical touch.
The Aromatic Toast: Once the cookies are in the oven, intentionally step away from the rush of the day. As the 15–18 minute bake progresses, breathe in the specific aromatic shift as the butter and sugar meld with the scent of toasted cornflakes. Let this scent serve as a "sensory cue of care and continuity" within your home.
The Golden Wait: Treat the cooling time on the tray as an "ingredient of patience". Before you share these golden clusters, take a final quiet moment to acknowledge the hands that made them—your own—and the "tangible legacy" of comfort you are carrying forward for those who will inherit your table.
