300g penne or spirale pasta
1 onion, finely chopped
50g butter, chopped
2 tablespoons of plain flour
2 cups of milk
1 cup of grated cheddar cheese
½ cup of grated Parmesan
1 ½ cups of chopped ham
1 cup of frozen peas
1 cup of frozen corn
1 zucchini, grated
¼ cup of chopped parsley
Salt & pepper
Green salad (to serve)
Lightly grease a large ovenproof dish (approximately 14-cup capacity).
Cook the pasta in a large saucepan of boiling salted water until tender. Drain well and transfer to a large mixing bowl.
Meanwhile, melt the butter in a medium saucepan over medium heat. Add the finely chopped onion and cook, stirring occasionally, until soft and translucent.
Sprinkle the plain flour over the onion and cook, stirring for about 1 minute, or until the mixture is bubbling. Remove from the heat.
Gradually stir in the milk until combined, then return the pan to the heat. Cook, stirring continuously, until the sauce boils and thickens. Stir in half of the cheddar cheese and half of the Parmesan.
Pour the cheese sauce over the pasta in the bowl. Add the chopped ham, frozen peas, frozen corn, grated zucchini, and chopped parsley. Season with salt and pepper, then toss gently until everything is evenly combined.
Spoon the mixture into your prepared ovenproof dish and sprinkle the remaining cheddar and Parmesan cheeses evenly over the top.
Cook uncovered in a hot oven at 200°C (180°C fan-forced) for 25 minutes, or until the cheese is melted and beautifully golden. Serve warm alongside a fresh green salad.
