There's nothing fussy about this one - just lamb, brought low and slow until it's tender, brightened with a touch of mint and wrapped in buttery pastry. It's the kind of pie that turns an ordinary weeknight into something worth sitting down for, and it fills the house with the kind of smell that pulls everyone to the kitchen before dinner is even called. Simple ingredients, patient cooking, and a result that's more than the sum of its parts.

500g boneless lamb, diced
1/2 an onion, finely chopped
1/2 tspn of minced garlic
1 heaped TBSP of Bistro gravy powder
500ml of hot water
1/4 tspn of curry powder
1/4 cup of thick mint sauce
1 TSPN of cornflour
Puff pastry, enough to line and top a pie dish
🌿 Legacy Note: Adjust the mint sauce to taste - a little extra brings a brighter, fresher finish to the rich filling.
Melt butter in a fry pan and brown the diced lab. Add the onion and garlic, cooking until tender.
In a seperate bowl, mix the Bistro gravy powder with the hot water and stir until thickened.
Transfer the browned lamb into a large saucepan, add the gravy stock, cover, and simmer on low heat for 90 minutes.
Seperately, mix the cornflour with a little water to form a smooth paste, then stir it into the filling along with the mint sauce.
Line a pie dish with pastry, fill halfway with the lamb mixture, and cover with puff pastry.
Bake at 200'c for 30 minutes, or until the pastry is golden.
