4–5 potatoes
2 eggs
1/2 an onion, finely diced
1 small tub of mayonnaise
🥚Legacy Note (🐾 MFH Variation): Remove hard-boiled eggs from the recipe.
🥗 Legacy Note (🔥CCN Variation): After mixing in the mayonnaise, add 200g of diced ham and 1 tablespoon of chopped parsley. Mix well and serve cold, garnished with extra parsley over the top.
Dice the potatoes and boil them in a saucepan of water until tender and cooked through. Drain well.
Seperately, boil 2 eggs in a saucepan of water for 15 minutes. Remove shells and slice into quarters.
Transfer the cooked potatoes to a bowl, add the finely diced onion, and allow the mixture to cool slightly.
Add the tub of mayonnaise and stir gently until the potatoes and onions are evenly coated. Add the eggs and gently fold the egg in.
Serve warm as a comforting side dish.
