Stuffs one whole chicken
5 slices of bread (crusts removed)
1/2 an onion, finely diced
1/4 cup of mixed herbs
1 tablespoon of margarine
🧄 Legacy Note: Try adding a little crushed or minced garlic to your stuffing mix for an added depth of flavour.
Remove all the crusts from the slices of bread. Gently tear the soft bread into small, coin-sized pieces.
Place the torn bread into a medium-sized mixing bowl and add the finely diced onion and mixed herbs.
Add the tablespoon of margarine. For the most authentic and cohesive texture, mix the ingredients together thoroughly by hand, working the margarine through the bread until a soft stuffing forms.
Generously fill the cavity of your chicken with the stuffing before roasting.
The Ingredient of Patience: Once the chicken is stuffed and placed in the oven, purposefully step away from the kitchen workspace. Let the long roasting time serve as a period of rest, lightening your load and trusting the heat to do the work while you take a quiet pause.
The Sensory Anticipation: As the rich, savoury scent of mixed herbs and roasting onion begins to permeate the house, allow the aroma to ground you. Notice how this familiar scent signals care, comfort, and the impending gathering of loved ones.
The Mindful Tasting: When the meal is carved and served, take your first bite of the stuffing with complete intention. Notice the soft, yielding texture of the bread contrasting with the roasted meat. Let the earthy flavours of the herbs and onion linger on your palate, acknowledging the simple, profound comfort this staple brings before engaging in the lively conversation of the table.
