2 cups of mixed fruit
450g of self-raising flour
170g of margarine
3 eggs
1/4 cup of milk
1 cup of sugar
1 TSP of lemon essence
Rub the margarine into the self-raising flour until the mixture resembles fine breadcrumbs.
Stir in the sugar and mixed fruit until evenly distributed.
Add the lemon essence and the eggs. Gradually pour in the milk—using slightly less than the full 1/4 cup—mixing until the ingredients come together to form a stiff dough.
Hand-shape the dough into rustic buns and place them on a greased tray or onto baking paper.
Bake for 16 minutes at 200°C until golden and firm.
