2 sheets of flaky puff pastry
100g feta cheese, crumbed
135g frozen spinach, thawed and drained
1 small to medium onion, finely chopped
1 tablespoon of chopped parsley
1 egg
1/4 cup of parmesan cheese, grated
1/2 teaspoon of garlic, minced or crushed
Milk (for brushing)
🍅 Legacy Note: You can add thin slices of tomato on top of the spinach mix before closing to easily sneak extra vegetables into the kids' diets.
⏲️ Legacy Note (Quick Variation): If you are low on time, place the spinach mix in the center of one full sheet of pastry and fold both sides over to make a single log.
Thaw the flaky puff pastry sheets at room temperature.
In a mixing bowl, gently combine the crumbed feta, thawed spinach, chopped onion, parsley, egg, grated parmesan, and minced garlic.
Cut each pastry sheet into four equal squares. Place one tablespoon of the spinach and feta mixture into the centre of each square.
Lightly brush the edges of the pastry with milk, then fold the pastry over to form a triangle. Crimp the edges firmly to seal the parcel.
Place the prepared parcels on a baking tray and brush the tops lightly with milk for a golden finish.
Bake in a preheated oven at 200°C for 15–20 minutes, or until the pastry is puffed and golden. Note: To avoid burning, keep turning the pastries every 5–10 minutes or so. While the top may look uncooked, the bottom can brown quite fast.
